Soft serve for a steamy day

The hardest part about summer for me is the desire to grab a soft serve ice cream treat at every corner! I seriously LOVE ice cream!

A couple of years ago when I got a VitaMix blender (although a food processor works well too) I discovered the ability to make my own soft serve treats!

I LOVE strawberry ice cream and have made a vegan version for all my dairy free girls today. It tastes just as great as real ice cream and it’s WAYYYY healthier. You know it’s kinda my thing to find an alternative to the yummy foods that boosts their fitness appeal ;)

So without further delay, here is strawberry soft serve a la Sammie

Ingredients:

Frozen strawberries (you can also experiment with other frozen fruits and berries)
1 tsp vanilla extract OR some fresh pulp from a vanilla bean
Silk Soy Creamer
2 stevia packets
Dash of cinnamon (it’s like the “Franks red hot” in my nutrition, I put that ish on everything! LOL)

Place all ingredients in your blender or food processor.

Blend until smooth (you may need to stop to scrape sides/move the berries around.

Enjoy your cold treat! You can store in the freezer in an airtight container but be sure to bring it out shortly before serving to soften up!

    OMG that looks great – I have been lusting after a Vitamix for a while now…gotta get to Costco to grab one! You’d be proud of my restraint Sammie – up here in Uxbridge we have Kawartha Dairy which not only has some of the best ice cream around because it’s made with whole ingredients (read CREAM!), but you get a massive waffle cone for $3.50! I took some friends yesterday and just watched them inhale their ice creams :-( Now I could join in!!!

    For people who aren’t into Soy Milk (waaaay too processed for my taste) you could substitute it with frozen bananas, which add a surprising amount of creamy texture!

    A friend also told me he uses greek yogurt instead himself! There are plenty of options! You could even use homemade soy or almond milk!

  6. Yum! I love this healthy alternative to ice cream (I am now dairy free too and was missing ice cream big time!!) I have a banana in the freezer so I can make myself a little treat later tonight!!

    Hey ladies, it really depends on how much I am making. I’d say for 1 cup of frozen berries it’s approx 1/4 cup of soy creamer but adjust to your liking and to get the right consisitency.

    You can usually find it in the health food section of the grocers. It’s essentially an all natural sweetener. You could sub honey.

    Hey girls, I absolutely LOVE ice-cream too! My husband gave me this recipe for smoothies and it’s awesome..all my friends love it.

    1 frozen partly bruised banana (could sub for a fresh one and add ice)
    1/3 cup frozen sliced strawberries ( could buy the whole ones)
    1/4 cup frozen blueberries
    1/4 cup non fat vanilla yogurt ( could use 1% yogurt..whatever )
    1/2 tsp of peanut butter (you need your protein!)
    3/4 cup of 1% milk (2% or Soy milk) chocolate milk is really good in this recipe too yum!..I usually use 1% if I’m going for choc. milk though.
    Add extra milk to thin out the smoothie if needed.
