Complete Your Day With This Clean Meal
So you’ve done your part to exercise for the day! Now you need to keep it up with a nice clean meal. This Edamame stew will do the trick. Full of protein, it’s a great meal to have after your workout because it will help to repair your muscles, making you stronger and ready to go for your next workout!
Ingredients:
3 cups frozen shelled organic edamame
1 tbsp extra-virgin olive oil
1 large onion
1 large zucchini
2 tbsp garlic
1 tsp ground coriander
1/8 tsp cayenne pepper
1 cup tomatoes
¼ cup mint
1 cup quinoa
3 cups water, divided
2 tsp lemon juice
Directions:
1. Using a pot, boil 2 cups of water and once boiling, add in your cup of quinoa. Cook your quinoa on medium heat for about 15 minutes until soft.
2. In a large saucepan, add 1 cup of water and bring to a boil. Add your edamame and cook until tender. It should take around 4 or 5 minutes. Once ready, drain the water and set aside.
3. Chop up your onion, zucchini, and garlic.
4.Heat your olive oil in a saucepan over medium heat and add in your onion and zucchini. Cook, stirring occasionally for about 3 minutes. Add in your garlic, cumin, coriander, and cayenne and stir about every 30 seconds for 3 more minutes.
5.Chop up your tomatoes in chunks and add into your stew. Reduce heat and simmer to cook for about 5 minutes.
6.Stir in your edamame and cook until heated through. It should take about 2 minutes.
7.Add in your cooked quinoa once it’s ready.
8.Remove from heat, stir in 2 tbsp of lemon juice and chop up your mint to garnish!
