Crowd Pleasing Coffee Cake
Don’t be fooled by the word ‘Vegan’ for this recipe! With the many spices used in this dessert, it will be a crowd pleaser. You can serve this cake with some of your favourite coffee, or enjoy on it’s own for a treat!
Vegan Coffee Cake
Serves 6.
Ingredients:
2 cups almond flour
¾ cup rolled oats
1/3 cup coconut sugar
1 tbsp baking powder
2 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground ginger
Pinch of sea salt
½ cup coconut oil
1 tsp apple cider vinegar
¾ cup almond milk
Topping:
1 cup pistachios
½ cup coconut flour
1/3 cup coconut sugar
2 tsp ground cardamom
1 tsp baking powder
Pinch of salt
1/3 cup coconut oil
Directions:
1. Preheat your oven to 350 degrees F.
2. Using a 9-inch baking pan, grease it with a little bit of coconut oil.
3. In a large bowl, combine your flour, ½ cup of oats, baking powder, cinnamon, nutmeg, ginger, and salt.
4. Remove about ½ cup of the mixture and place in a separate bowl. Add the remaining ¼ cup of oats in along with 2 tbsp of coconut oil and set this mixture aside.
5. Stir your apple cider vinegar and almond milk into your large bowl and pour the batter into your baking pan.
6. Top the batter with your reserved oat mixture.
7. Top make the topping, remove the shells from your pistachios and grind them up in a food processor. Slowly add in your flour until smooth. Add the sugar, cardamom, baking powder and salt until combined.
8. Add in your coconut oil and process until evenly moist.
9. Pour the topping over your cake and bake for about 45 minutes. If you find your topping starts to turn golden before the cake is done, cover it with foil to keep it from burning!
10. Serve with your favourite drink and enjoy!

What can I use to substitute for the almonds? I’m allergic, but this sounds delish!
Almond flour is a difficult one to substitute. Unfortunately since baking is such a science there’s no real easy sub. I tried a white bean coffee cake a while back that I need to tweak. I’ll work on that and hopefully have a good alternative up for you soon!
